Green Seasoning

Green seasoning is one of the most vital ingredients in all Caribbean cooking. While every island has a slightly different blend, this is the blend we use in the restaurant to get those beautiful flavours in all of our meats.  

Ingredients:

  • 1 bunch of Shaow Beni

  • 1 Bunch of Cilantro

  • 1/2 Bunch Parsley

  • 3 Green Onion

  • 1 small onion chopped

  • 10 cloves of Garlic

  • 1 inch of Ginger

  • 6 sprigs of Thyme

  • 1 scotch Bonnet (add more for more heat)

  • 5 Pimento

  • 6 stalks of Celery

  1. Wash all of your greens, pat dry and rough chop all ingredients to prepare for the blender

  2. Add all ingredients to Blender

  3. Add a cup of water

  4. Blend!

  5. Feel free to add water as needed

This recipe should make about 3 cups of seasoning. Feel free to portion out what you need immediately and freeze the rest in a ziplock of container for later use. That’s it guys! Enjoy your green seasoning.
