Green Seasoning
Green seasoning is one of the most vital ingredients in all Caribbean cooking. While every island has a slightly different blend, this is the blend we use in the restaurant to get those beautiful flavours in all of our meats.
Ingredients:
1 bunch of Shaow Beni
1 Bunch of Cilantro
1/2 Bunch Parsley
3 Green Onion
1 small onion chopped
10 cloves of Garlic
1 inch of Ginger
6 sprigs of Thyme
1 scotch Bonnet (add more for more heat)
5 Pimento
6 stalks of Celery
Wash all of your greens, pat dry and rough chop all ingredients to prepare for the blender
Add all ingredients to Blender
Add a cup of water
Blend!
Feel free to add water as needed
This recipe should make about 3 cups of seasoning. Feel free to portion out what you need immediately and freeze the rest in a ziplock of container for later use. That’s it guys! Enjoy your green seasoning.
