Curry Chicken
Ingredients:
1 pack of chicken drumsticks & 1 pack of chicken thighs (bone in)
2-3 spoons of green seasoning
1 pimento (optional)
3 cloves of garlic
1 white onion (chopped)
3 sprigs of thyme
5 strips of Shadow Benni
1 scotch bonnet pepper (optional)
1 1/2 red potato (wash, peeled, cubed)
3-4 Tbsp of Bindy’s Curry powder
1 tsp of black pepper
1 tsp of salt
Meat:
wash/clean chicken
In a bowl mix chicken with green seasoning
chop pimento, garlic and bandania, add to bowl
cube onion and add to bowl
add black pepper, slat, thyme
Combine all the ingredients in the bowl
wash, peel and cube potatoes. Set aside for later
Method:
Pre- Heat pot on stove
add 2-3 tsp of oil to a warmed pot
Once the oil is hot, add Bindy’s curry powder
add 1/2 cup of water
Fry until curry comes to a paste like consistency
add seasoned chicken and mix together
when the chicken starts to spring water, add cubed potatoes
cover and let simmer for 15 minutes, stirring every 5 minutes
add 1 cup of water
cooked for another 25 minutes or until chicken is cooked through and potatoes are soft
Stir occasionally
Serve on rice or with Bindy’s dhalpourie roti
